Superfruits may get lots of attention. But we shouldn’t forget the everyday food that’s also good for you. Here’s my partial list:

1. Potatoes
2. Corns
3. Peas
4. Button mushrooms

potato1

These are the organic Russet potatoes. Potatoes are also packed with vitamins B6 and C, potassium and fiber. My favorite kind is theYukon variety.

I like adding chunks of it to curry. Potatoes are really simple and easy to prepare.

An alternative way to enjoy French fries is to simply slice the potatoes into strips, then marinate with olive oil, sprinkle some black pepper, and add a pinch of Himalayan salt.  Instead of frying, just bake them until it’s golden and ready to eat.

On the same note as root vegetables, I am happy to find out that sweet potatoes are unlikely to be contaminated with pesticides. They are packed with Vitamin A and beta carotene. I like to prepare them the same way as my potatoes. But they are also good as tempura. That version you just can’t eat too often as they are very fattening!

One of my favorite summer time treat is fresh corn. Especially fresh picked corn just off the cooking pot. Add a little butter and some hot chili sauce and it’s perfect!

Corn is high in fiber and prevents sugar from corn of being absorbed too quickly by the body and causing a spike in blood sugar. It’s also packed with B vitamins and lutein which are good for your vision.

peas

Pretty peas in a pod.  They are also among the least likely vegetables to have pesticide residue.  Photo from the Daily Green.

Peas are another healthy everyday food. I also like adding peas to curry too. But not overcooked or canned peas, as they lose their color and don’t look to appetizing.

Peas offer a good mix of vitamins C, B and K1, minerals such as manganese, potassium and iron.  Just like carrots, they are also very good for your eyes.  As peas have lutein and zeaxanthin.

Button mushrooms may not get the same credit as shiitakes or other exotic mushrooms. They are sometimes found as pizza toppings. But they are also a good source of Vitamin D (for bone health), B vitamins (heart health), and minerals such as potassium and zinc. French researchers also found that white mushrooms deliver as much or more antioxidant power than more pricier mushrooms such as maitakes.

Peas is good for us? No wonder I have 20/20 vision.I have a funny story to tell. When I was in grade school I love eating peas with catchup. The other kids use to make fun of me during lunch time but I kept eating it. Strangely, my son and wife does not like peas but my daughter love it. And when I saw her eating it with catchup one day, I told them my story. Okay, it was not funny but I just wanted to share it with you all. ;-)

  2. Hi Dallas,

Yes, peas are good for us. As I’m sure many other vegetables too.

It must be difficult to get your kids to eat their veggies. Sounds like the apple (your daughter) doesn’t fall far from the tree. JK. I’ve never tried peas with ketchup - it doesn’t sound too bad. :)

I like to add chunks of potato in my curry also. My mom used to make chicken potato soup when we first came to America and I have not cooked that in a while.

My dad harvested his Asian white corn and they are good freshly picked.

Ketchup and peas sounds kind of odd, almost like my third sister putting ketchup in her coke because she saw our sponsor putting sugar in his coffee at McDonald.

  4. Hi Nye,
Potatoes in chicken soap is good. Along with carrots and lemongrass.

Ketchup with diet coke is very strange! Did your sister finish her drink? That is a funny story. :)
